LEstaing is raw sheep's milk cheese from the commune of Estaing in the Aveyron region of southern France, in the Midi Pyrnes mountains. Berger du Larzac is a small dairy that works exclusively with 6 herds in the region. This is our favorite sheep milk producer in all of France. Tomme L'estaing is semi firm paste with a natural rind.
